The Norcini, the craftsmen of pork, are the ones we owe the splendid flavour of mountain ham to, which is found in abundance on our tables. The name derives from Norcia’s people who, with extreme passion and skill, achieved the right balance of spices to cured produce. A tasting will include the valuable Black Truffle of Norcia, the Prosciutto IGP (quality controlled) as well as the healthier and ever present pulses such as the IGP (quality controlled) lentil from Castelluccio di Norcia, spelt from Monteleone, cicerchia and roveja), various types of local cheeses including pecorino, mixed milk cheeses and cow cheese and the purest saffron from Cascia.
